Welcome back pals! This week, we’re taking our name quite literally and teaching you how to take one of the most popular Spud’s Coffee menu items and make it at home.
Before we dive into toast, we’ve got to tell you all about the mango festival last weekend!
Mango tonic, mango tart, mango chia pudding, and mango coffee crumb cake prep continued well after sundown on Friday (closer to sun-up for Megan 🥲) and yet we still showed up for 7:30am yoga on Saturday for Jess’s first time teaching in a studio since her certification! Despite the zombie-like way we kicked off the day and the subsequent figurative fires Megan put out before we made it to the festival, it was a beautiful day!
Thanks to Island Space’s Vice Present & MC of the day, David Muir, the mango cake SOLD OUT before we were even halfway through! Luckily for you, it’ll be available at Spud’s for a limited time while our mango plug keeps pulling up every weekend with a batch straight from the tree.
It was also such a pleasure to meet Chef Thia and hear her kind words and support from one Caribbean chef to another. Maybe one day it’ll be our sweet baby Megan giving the cooking demonstration and signing & selling cookbooks at the festival. Chef has given us some inspo, big time. 🥰
Burrata Toast with Orange Marmalade 🍊
Anywayyyyy, back to our regularly scheduled programming and the recipe of the week! At Spud’s, the toast is the perfect light breakfast, afternoon snack, or app for the table. You can also play around with seasonal fruit or different types of oranges to change it up or make it your own. Obviously, we added some mango the last time we made it.
There’s no *actual* cooking involved in this one - just print and add straight to your recipe box! However, a few notes from chef:
Megan prefers cara cara or navel oranges since they’re the sweetest, but you can play around with whatever you like
For the marmalade, Megan likes BONO Organic Sicilian Orange Marmalade (or The Fresh Market brand, her local grocer)
For cheese, fresh local burrata is always best, but Belgioso is a good alternative found in most grocery stores
Mint is optional! Megan highly recommends it but also supports your preferences
